Chile ancho is the dried version of the poblano pepper, which originates from Puebla, Mexico. The ancho chili holds a robust smoky flavor that resembles mild notes of paprika with a gentler sweet-heat. The Ancho chili is a very noble and versatile ingredient that enhances any Mexican dish. It can be mixed dried or rehydrated by adding boiling water after cleaning the chili of its stem and seeds.

It is a dry pepper, and Ancho is commonly added to sauces, soups, and marinades to enhance their flavor; it's used pureed, chopped, or powdered.

Its name is due to its width, as "ancho" in Spanish means "wide."
