Green curry is a Thai curry known for its vibrant green color and bold, spicy flavor. The distinctive green hue comes from a paste made with green chilies, cilantro, lime leaves, and other aromatic herbs and spices. Coconut milk is a key ingredient, contributing to the curry's creamy consistency. Green curry is often prepared with a variety of proteins such as chicken, shrimp, or tofu, and includes vegetables like eggplant, bamboo shoots, and bell peppers. It strikes a balance between heat, sweetness, and herbal notes, creating a flavorful and aromatic dish that is popular in Thai cuisine.

Directions:

Serves 4 people:

  • 1 packet of Aromax Yellow Curry Paste
  • 160ml coconut milk
  • 180ml water
  • 200g pieces of meat (chicken, duck, lamb or beef)
  • Eggplants or aubergine or green peas
  • 2-3 tablespoons. Cooking oil.

Preparation:

  1. Heat the oil and add Aromax Green Curry Paste and heat over low heat (1 min.)
  2. Add the meat and stir fry.
  3. Add coconut milk, water, eggplants or aubergine or green peas and bring to the boil.
  4. Season to taste with fish sauce and sugar. Put some kaffir lime leaves, red chili or sweet basil, serve hot.
