Thai Yellow Curry Recipe
Ingredients:
- 2 tablespoons Authentic Thai Yellow Curry Paste
- coconut milk to taste
- 450 g chicken breast or thighs, cut into bite-sized pieces
- 2 medium potatoes, peeled and cubed
- 1 large carrot, sliced
- 1 small onion, chopped
- 1 red bell pepper, sliced
- 1 tablespoon fish sauce (or soy sauce for a vegetarian option)
- 1 teaspoon sugar
- 1 cup chicken broth or water
- Fresh cilantro, chopped (for garnish)
- Cooked jasmine rice (for serving)
Instructions:

Prepare the Ingredients:
- Chop the vegetables and chicken.

Cook the Curry Paste:
- In a large pot or wok, heat a little oil over medium heat. Add the 2 tablespoons of Authentic Thai Yellow Curry Paste and cook for about 2-3 minutes, stirring frequently until fragrant.

Add the Coconut Milk:
- Gradually add the coconut milk, stirring well to combine with the curry paste. Bring to a gentle simmer.

Cook the Chicken and Vegetables:
- Add the chicken pieces to the pot and cook for about 5 minutes. Then, add the potatoes, carrots, and onion. Stir well to coat everything with the curry sauce.

Add Broth and Seasonings:
- Pour in the chicken broth or water, and add the fish sauce and sugar. Stir to combine. Bring to a boil, then reduce the heat and let it simmer for about 15-20 minutes, or until the chicken is cooked through and the vegetables are tender.

- Add the sliced red bell pepper and simmer for an additional 5 minutes, just until the bell pepper is tender but still crisp.
